This time of year, we’re already getting into the festive mood and thinking about holiday baking for Thanksgiving and Christmas. Although we’ve already had our Thanksgiving in Canada, I’m already pondering what to premake for Christmas. Cranberries are one of their foods that are associated with the holiday season, and I like to incorporate them in lots of recipes. They’re colorful, full of flavor and go with so many foods. Here’s one of my favorite muffin recipes; these muffins are made with fresh cranberries, not the preformed canned stuff. They’re great for breakfast, snacks, and ideal to serve during the festive season.
Makes 12 muffins
*1 cup of rolled oats
*1 cup of yogurt of kefir
*1/4 cup white sugar
*1/2 cup brown sugar
*1 cup flour
*1 tsp salt
*1 tsp baking powder
*1/2 tsp baking soda
*3/4 cup chopped cranberries
1. Preheat oven to 400 degrees F.
2. Soak oats in yogurt or kefir just enough to make it moist.
3. Sift dry ingredients into a bowl.
4. In a separate bowl, add oil, sugars, and egg.
5. Beat until well blended.
6. Gradually fold in dry ingredients.
7. Add chopped cranberries.
8. Put in greased or lined muffin tins.
9. Bake for 20 minutes.
You can also add walnuts and orange zest to the muffins for a different flavor. Garnish your muffins with a sprinkle shredded coconut or a glaze for a little pizzazz.
