Fall is officially here and my yard is full of colorful leaves that twinkle with the essence of autumn. Many of my neighbors have been decorating their yards and front steps with pumpkins, gourds, dried corn cobs, and scarecrows. It puts me in the mood for some warm and delicious corn recipes, and I have a delicious Corn Muffin recipe to share with you.
1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin pan or line with paper muffin liners.
2. In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt. Add egg, oil, and milk; stir gently to combine. Spoon batter into prepared muffin cups.
3. Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.
We love these and have them for breakfast and snacks. They’re great for coffee breaks at work, school snacks, and tea with the girls.
