I’ve been a vegan for over 20 years but I’ve switched it up and I’m eating more raw meals now. So, I’m build my repertoire of mouthwatering raw recipes. Many of my friends think I’ve confined myself to a boring life of carrots and broccoli with high fat snacks like nuts. Nothing could be further from the truth and this medley of recipes will prove it. Granted there are raw recipes that are high in nut content that you may want to avoid for the moment if you are trying to lose weight.
Savory Raw Dinner recipes is a culmination of tasty raw meals that were created specifically to be low-fat yet
maintain their scrumptious flavors. If you’ve had the chance to check out some vegan gourmet recipe books you may have noticed a lot of the recipes require unfamiliar and high fat ingredients and the prep time can seem endless. Savory Raw Dinners is comparable to a gourmet recipe book yet this chef uses everyday ingredients that you can quickly whip up into an awesome meal. The bonus is they are low fat, high nutrient and have tremendous flavor.
There are recipes for Soups, Dips & Pates, Salad dressings, Entree salads, Side salads, Snacks/Appetizers, Entrees, Sauces and Desserts. Every recipe I tried was quick and easy to make and very delicious.
One of my favorites is the Mexican Cilantro Corn Soup. If your crazy about Mexican food you will really enjoy this recipe. It took me about 20 minutes to make and that’s including prep time. We’ve eaten this as a raw soup and my family has also warmed it up and served it over organic pasta, organic brown rice and steamed veggies. It has such a yummy taste and you won’t want to stop eating it!!
The Lower Fat Hemp Seed Hummus is another fab recipe. I’m not crazy about zucchini but in this recipe I could eat them forever. D-E-L-I-C-I-O-U-S!!! This recipe can be used as a dip, sauce and as a spread. My kids use it as a spread for their sandwiches and they love it.
Many of Veronica’s recipes call for lime juice which I’ve never used in recipes before. I tried them when I was younger and thought them too sour. I love lemons and always substituted them for the limes. This time I used limes and I found I really like them. Dare to try something new even if you don’t feel inclined to, you may be pleasantly surprised.
I eat a lot of salads because I love them. In order to snaz up the taste I try making different homemade raw vegan dressings. The Orange Hemp Dressing is soooo tasty. It calls for clementine oranges which I couldn’t find so I used regular oranges and I was not disappointed. This dressing is sweetened with a date and really adds such a nice flavor. I’ve included the recipe below. I’ve tried all of the salad dressings and love them all.
Orange Hemp Dressing
2/3 cup clementine mandarin orange juice (4 small oranges)
3 Tbsp hemp seed
1 small date
2 Tbsp nutritional yeast
pepper to taste
dash of salt
chili pepper *optional
1/2 tsp psyllium powder
Place all ingredients (except psyllium powder) in a Vitamix or blender and blend until smooth.
Taste test and adjust seasonings if necessary.
Addy psyllium powder and blend again until thickened.
Serve and refrigerate any leftovers.
**Clementines are one of the sweetest mandarin style oranges and they are perfect for using as a base for salad dressings. Make sure to use another sweet variety of orange if you cannot find this type. Always taste your oranges before juicing for a recipe. If your orange juice is a bit sour your will want to add another date or two.
The Best Raw Vegan Caesar Salad is to die for. Standard caesar salads contain eggs and anchovies which I would never eat so it was very exciting to try out this recipe and savor the zingy taste. I’m in love with this recipe!! The Lower Fat Taco Salad is very quickly becoming a regular on our menu. Your whole family will love this take on a dinner classic. The Banana Ice Cream is one of the simplest and delightful desserts you will ever eat. It’s a no fat, no additives delicious healthy tasty treat.
I really could go on about all the tasty and delightful recipes from the Savory Raw Dinner scrumptious collection. This chef has really put a lot of thought into creating low fat meals that are tempting, delectable and very healthy for you. It’s a big hit with me!
